What is AGEs Avoidance (Cooking Methods)?

Advanced Glycation End-products (AGEs) are toxic compounds formed when proteins or fats react with sugars, especially during high-heat dry cooking. Dry heat (grilling, frying, broiling, roasting) increases AGEs by 10-100x above uncooked levels. Dietary AGEs drive oxidative stress, inflammation, insulin resistance, and accelerated aging. Switching cooking methods can dramatically reduce AGE intake.

  1. 1.Replace dry-heat cooking with moist-heat methods: boil, steam, braise, poach, stew, or slow-cook instead of grilling, frying, broiling, or roasting
  2. 2.Use acidic marinades (lemon juice, vinegar, tomato) before cooking — acidity significantly reduces AGE formation
  3. 3.Minimize processed and pre-cooked foods (bacon, hot dogs, chips, crackers) — these are among the highest AGE sources
  4. 4.Cook at lower temperatures for longer times; when you must brown food, do so briefly at the end rather than throughout
  5. 5.Prioritize low-AGE foods: fresh vegetables, fruits, whole grains, legumes, and raw nuts — these have low AGEs even after cooking
